  • by

Homemade lemon curd is one of those simple recipes that can transform ordinary desserts into something truly special. With its bright citrus flavor, smooth texture, and beautiful golden-yellow color, this delicious lemon spread is perfect for anyone who loves the refreshing taste of fresh lemons.

Made with fresh lemon juice, lemon zest, eggs, sugar, and butter, lemon curd has a wonderfully creamy consistency and a perfect balance of sweet and tangy flavors. It is delicious spread on toast, served with scones, spooned over pancakes, or used as a filling for cakes, cupcakes, cookies, and tarts.

The best part is that making lemon curd at home is easier than you might think. You do not need any special equipment or complicated ingredients. With a little patience and gentle heat, you can prepare a batch of homemade lemon curd that tastes fresher and more flavorful than many store-bought versions.

Ingredients

To make approximately 2 cups of homemade lemon curd, you will need:

  • 4 large fresh lemons
  • 3/4 cup (150 g) granulated sugar
  • 3 large eggs
  • 1 large egg yolk
  • 1/2 cup (115 g) unsalted butter, cut into small cubes
  • 1 tablespoon finely grated lemon zest
  • A small pinch of salt

Choose fresh, juicy lemons for the best flavor. If possible, use unwaxed lemons because the recipe includes lemon zest.

Step 1: Prepare the Lemons

Wash the lemons thoroughly under running water and dry them with a clean towel.

Using a fine grater, remove the yellow outer layer of the lemon peel. Avoid grating the white part underneath, known as the pith, because it can make the curd taste bitter.

Cut the lemons in half and squeeze out the juice. Remove any seeds and measure approximately 1/2 cup (120 ml) of fresh lemon juice.

Freshly squeezed lemon juice gives homemade lemon curd its distinctive citrus flavor and natural acidity.

Step 2: Combine the Eggs and Sugar

In a medium heatproof bowl, whisk together the three whole eggs, one additional egg yolk, and granulated sugar.

Continue whisking until the mixture becomes smooth and slightly lighter in color.

Add the lemon zest, fresh lemon juice, and a small pinch of salt. Whisk everything together until the ingredients are thoroughly combined.

At this stage, the mixture will be thin and bright yellow. Do not worry about the consistency, because it will gradually thicken as it cooks.

Step 3: Cook the Lemon Mixture Gently
