Classic Lawry’s-Style Prime Rib Roast – Perfect Medium Rare

  • by

Step 1: Prepare the Beef

Remove the prime rib roast from the refrigerator approximately 1–2 hours before cooking, depending on its size.

Pat the beef completely dry using paper towels. This helps develop a beautiful browned crust.

Trim excessive surface fat if necessary, but leave a thin layer to help keep the meat moist and flavorful.

Step 2: Prepare the Seasoning

In a small bowl, combine the olive oil, softened butter, minced garlic, rosemary, thyme, salt, black pepper, onion powder, and Dijon mustard.

Mix until everything forms a fragrant herb butter.

Step 3: Season the Prime Rib

Rub the seasoning mixture generously over the entire surface of the roast.

Make sure the sides and ends are well coated.

Place the roast on a rack inside a roasting pan, with the fat side facing upward.

Step 4: Preheat the Oven

Preheat your oven to 450°F (230°C).

Allow the oven to reach the correct temperature before placing the beef inside.

Step 5: Roast at High Temperature

Place the prime rib in the oven and roast for approximately 15 minutes.

This initial high-temperature cooking helps develop a flavorful, browned exterior.

Step 6: Continue Slow Roasting

Reduce the oven temperature to 325°F (165°C).

Continue roasting until the thickest part of the meat reaches your desired internal temperature.

For medium-rare, remove the roast when it reaches approximately 120–125°F (49–52°C), then allow it to rest. The temperature will rise during resting.

Use an instant-read meat thermometer rather than relying only on cooking time.

Step 7: Rest the Meat

Remove the roast from the oven and transfer it to a cutting board.

Loosely cover it with aluminum foil and allow it to rest for 25–30 minutes.

Resting allows the juices to redistribute throughout the meat, helping keep every slice tender and juicy.

Step 8: Prepare the Beef Au Jus

While the roast rests, place a saucepan over medium heat.

Add a little of the reserved roasting drippings, chopped onion, and minced garlic.

Cook for 2–3 minutes until fragrant.

Pour in the beef stock and Worcestershire sauce.

Add Dijon mustard and black pepper, then simmer for approximately 10 minutes.

Strain if desired and serve warm.

Step 9: Slice the Prime Rib
