Flourless Low-Carb Flatbread

  • by

1. Prepare the mixture
Add the eggs, Greek yogurt, mozzarella, cream cheese, salt, and garlic powder to a blender or mixing bowl.

2. Blend until smooth
Blend or whisk thoroughly until you have a smooth, lump-free batter. Let it rest for 2–3 minutes.

3. Heat the pan
Place a nonstick skillet over medium-low heat and lightly grease it with olive oil or butter.

4. Add the batter
Pour a thin layer of batter into the center of the pan. Quickly tilt the pan or use the back of a spoon to spread it into a round shape.

5. Cook slowly
Cook for about 2–3 minutes, until the bottom is golden and the top begins to set.

6. Flip carefully
Use a wide spatula to gently flip the flatbread. Cook the other side for another 1–2 minutes until lightly browned and cooked through.

7. Repeat
Continue with the remaining batter, lightly greasing the pan between batches if necessary.

8. Serve warm
Serve immediately while soft and warm. You can fold it, roll it, or use it as a wrap.
