Ingredients
3/4 cup light coconut milk
1 dragon fruit
1 dragon fruit
Directions
The night before making the smoothie, pour the light coconut milk into an ice cube tray. Place the tray in the freezer and freeze until the coconut milk is completely solid.
Peel the dragon fruit carefully using a knife or by hand. Remove the outer skin and prepare the fruit for blending.
Place the peeled dragon fruit, frozen coconut milk cubes, and blackberries into a high-speed blender.
Blend the ingredients until smooth and creamy. Continue blending thoroughly to help break down the natural seeds from the dragon fruit and blackberries.
Pour the finished smoothie into two glasses and serve immediately while cold and freshly blended.
