Creamy, fruity, and incredibly easy to make at home, this strawberry dessert comes together with just a few simple ingredients. It has a rich strawberry flavor and a wonderfully smooth texture.
Ingredients
- 2 cups fresh strawberries, hulled
- 1 cup heavy whipping cream, cold
- ½ cup plain Greek yogurt
- ¼–⅓ cup powdered sweetener or sugar, adjusted to taste
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- ½ cup finely chopped strawberries, for mixing in
- Fresh strawberries, for topping
Step-by-Step Instructions
- Prepare the strawberries
Wash and hull the strawberries. Add 2 cups of strawberries to a blender or food processor. - Blend the fruit
Add the lemon juice and blend until smooth. For a little texture, leave a few small strawberry pieces rather than blending completely. - Make the creamy mixture
In a large bowl, combine the cold heavy cream, Greek yogurt, sweetener, and vanilla extract. - Whip until fluffy
Using a hand mixer, beat the mixture for about 2–4 minutes, until it becomes thick and fluffy. Don’t overwhip. - Add the strawberry puree
Gently fold the strawberry puree into the whipped cream mixture until evenly combined. - Add strawberry pieces
Fold in the finely chopped strawberries for extra bursts of fresh fruit throughout the dessert. - Freeze
Transfer the mixture to a freezer-safe container and spread it evenly. Cover tightly and freeze for 4–6 hours, or until firm. - Make it scoopable
Let the ice cream sit at room temperature for about 5–10 minutes before serving. - Serve
Scoop into bowls or cups and garnish with fresh sliced strawberries.
Important: Fresh strawberries and dairy naturally contain carbohydrates, so this recipe is not truly zero-carb. For a lower-carb version, use an unsweetened yogurt and a zero-calorie sweetener, and keep the strawberry portion moderate.
